Iron-Deficiency Anaemia
Eating spinach is not enough. The absorption of iron depends almost entirely on what you eat it with.

India has one of the highest rates of anaemia in the world. Most patients are told to eat more spinach and take an iron tablet. What they are rarely told is that iron absorption is highly dependent on what you eat alongside it, and that many common Indian food habits actively block iron absorption.
This guide is general nutritional information, not medical advice. If you take medication or manage a diagnosed condition, always consult your doctor before changing your diet.
Two types of iron: haem and non-haem
Haem iron (from animal sourcesred meat, organ meat, chicken, fish) is absorbed at 15–35% efficiency regardless of what else you eat.
Non-haem iron (from plant sourcesspinach, dal, rajma, ragi, jaggery, sesame seeds) is absorbed at only 2–20% efficiency, and this rate is highly dependent on what you eat alongside it. This is why vegetarian Indian women are at particularly high risk of iron-deficiency anaemia despite eating iron-containing foods.
What enhances iron absorption
Vitamin C is the single most powerful enhancer of non-haem iron absorption. It can increase absorption by 3–6 times. The pairing must happen in the same meal.
Practical Indian pairings- Palak dal → squeeze of lemon juice before serving - Rajma chawal → tomato-based gravy (tomatoes are high in Vitamin C) - Ragi roti → amla chutney or a glass of nimbu pani with the meal - Poha → the lime juice added at the end genuinely increases iron absorption
Even a small amount of chicken or fish in a meal increases non-haem iron absorption from the other foods in the same meal.
What blocks iron absorption
Calcium competes with iron for absorption. Milk, curd, and paneer consumed in the same meal as iron-rich foods significantly reduce iron uptake. Separate them: iron-rich meal at lunch, dairy at a different time if anaemia is severe.
Phytates in wheat bran and legumes bind iron. Soaking and sprouting reduce phytate content significantly.
Tea and coffee contain tannins that strongly inhibit iron absorption. Chai drunk immediately after an iron-rich meal can reduce absorption by up to 60%. Wait at least an hour after an iron-rich meal before having chai.
Iron tablets are best taken on an empty stomach with a glass of nimbu pani, not with milk, chai, or calcium supplements.
The best Indian foods for iron
Ragi (finger millet)one of the highest plant sources of iron in Indian cooking. Ragi roti, ragi dosa, or ragi porridge are practical daily additions.
Rajmaexcellent source of non-haem iron. Red kidney beans in a tomato-based gravy with a squeeze of lemon creates an ideal iron-absorption pairing.
Palak and methiclassic iron-rich vegetables. The iron content is meaningful when paired with Vitamin C.
Jaggeryprovides approximately 11 mg iron per 100g. Small pieces after meals was a traditional practice with genuine nutritional basis.
Poharice flakes fortified with iron in many commercial brands. The lime juice added at serving genuinely increases absorption.
Managing anaemia as a vegetarian
Vegetarian anaemia management requires strategic pairing more than simply eating more iron-containing foods.
- Lemon on everything. Any iron-containing meal (dal, sabzi, ragi roti) should have a squeeze of lemon or accompany nimbu pani.
- Soak and sprout legumes before cooking to reduce phytates.
- Separate chai from iron-rich meals by at least an hour.
- Cook in an iron kadai. Cooking acidic foods (tomato-based curries) in cast iron leaches small amounts of iron into food.
- Amla daily. One of the richest Vitamin C sources in Indian cooking. Amla chutney or raw amla with any iron-rich meal significantly boosts absorption.

Asked every week
Why is my haemoglobin low despite eating spinach?
Most likely because of absorption blockers. Chai immediately after palak dal, dairy in the same meal, or insufficient Vitamin C pairing can reduce iron absorption from spinach to near zero.
How long does it take to recover from anaemia?
With adequate iron intake and absorption, haemoglobin typically takes 3–4 months to return to normal. Continue supplementation for the full duration even after feeling better.
Can I take iron supplements with chai?
No. Take iron tablets on an empty stomach with water or nimbu pani. Wait at least 45–60 minutes before chai.
Is jaggery better than sugar for anaemia?
Yes, in the sense that jaggery provides iron and trace minerals while sugar provides none. But the quantities typically eaten provide modest iron, sufficient as a complement, not as treatment.
Does anaemia cause hair fall?
Yes. Iron deficiency is one of the most common nutritional causes of hair fall in Indian women. Correcting iron levels (not just haemoglobin, but ferritin, stored iron) usually improves hair fall over 3–6 months.

I was already eating spinach. Moving my chai away from meals is what actually changed my levels.
