High Cholesterol (Heart Health)
Ghee is not the villain in Indian heart health. Refined flour, trans fats, and late heavy dinners are doing far more damage.

High cholesterol in Indian patients is often managed with advice that misidentifies the problem. Ghee is restricted, while biscuits and white bread (which raise LDL through refined carbohydrates and trans fats) remain in the diet.
This guide is general nutritional information, not medical advice. If you take medication or manage a diagnosed condition, always consult your doctor before changing your diet.
LDL, HDL, and triglycerides: what matters most for Indians
A standard lipid profile measures total cholesterol, LDL (the type that builds up in arteries), HDL (the protective type), and triglycerides.
Indians have a specific pattern that increases cardiovascular risk: high triglycerides, low HDL, and elevated LDL, often at lower body weights than Western counterparts. This pattern is driven heavily by refined carbohydrates, sweetened drinks, and sedentary behaviour, not primarily by dietary fat.
The foods that actually raise bad cholesterol
Trans fats are the most damaging; they raise LDL and lower HDL simultaneously. In Indian diets, the main sources are vanaspati, partially hydrogenated oils in biscuits and namkeen, and restaurant frying oil that is reheated repeatedly.
Refined carbohydrates (maida, white bread, biscuits, sugary drinks) raise triglycerides and small-dense LDL. This is a much bigger driver of the Indian lipid pattern than ghee.
Ghee: the nuanced truth
Ghee raises LDL in large quantities. A tablespoon of ghee per day in the context of a diet low in refined carbohydrates and trans fats is unlikely to cause significant cardiovascular harm and may improve HDL.
The problem in Indian diets is not usually one teaspoon of ghee on a phulka. It is vanaspati in restaurant food, trans fats in packaged snacks, and a diet high in maida.
Foods that actively lower cholesterol
Oats contain beta-glucan, a soluble fibre that directly binds bile acids and reduces LDL reabsorption. A bowl of plain oats for breakfast is the most evidence-backed single food change for reducing LDL. Indian-style oats upma with vegetables is an excellent adaptation.
Rajma and chana are high in soluble fibre and plant sterols, both of which reduce cholesterol. Replacing a portion of rice with chana at a meal, or eating rajma twice a week, has a measurable impact on LDL.
Walnuts and almondsa small daily handful reduces LDL modestly while improving HDL.
Mustard oilthe most commonly used cooking oil in north Indian households has a good omega-3 to omega-6 ratio, unlike refined sunflower oil.

Asked every week
Can I eat eggs with high cholesterol?
Yes. Current evidence suggests up to one egg per day does not significantly worsen lipid profiles for most people. The saturated fat in what you eat with the egg matters more than the egg itself.
Which cooking oil is best for high cholesterol?
Cold-pressed mustard oil and olive oil have the best evidence for heart health. Refined sunflower oil and soybean oil are high in omega-6 and low in omega-3. Vanaspati should be avoided.
Does coconut oil raise cholesterol?
Coconut oil raises both LDL and HDL. It is not ideal for people with already high LDL, but using it occasionally in South Indian cooking is unlikely to cause significant harm.
How long does it take to see improvement?
Meaningful LDL improvements from dietary changes take 6–12 weeks. A lipid profile should be tested after that period to assess response.
Are statins always necessary?
That is a question for your cardiologist. Diet can significantly reduce LDL in people with mild to moderate elevation, but if your LDL is very high or you have other cardiovascular risk factors, medication may be appropriate alongside dietary changes.
